Ingredients

For the Carrot Cake:

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup vegetable oil

4 large eggs

3 cups grated carrots (about 6 medium-sized carrots)

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth.

Grate Carrots: Prepare your carrots by washing, peeling, and grating them finely.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Avoid over-mixing. Fold in the grated carrots, crushed pineapple, and nuts if using.

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cake: Once baked, allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.

Prepare the Frosting: While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar and mix until fluffy. Add the vanilla and a pinch of salt, mixing until well combined.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of cream cheese frosting on top. Place the second layer on top of the frosting and use the remaining cream cheese frosting to cover the top and sides of the cake.

Decorate (Optional): For an extra touch, you can garnish with additional chopped nuts or even a sprinkle of cinnamon on top.

Slice and Serve: Cut into slices and serve your moist carrot cake to family and friends. Enjoy this delicious treat!
