2 medium zucchinis

1 pound ground turkey (or beef)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade seasoning mix)

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Sliced jalapeños (optional, for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the center with a small spoon or melon baller to create cups. Leave about 1/4 inch of zucchini on the sides. Set aside.

      Cook the Meat: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.

        Add Protein and Seasoning: Add the ground turkey (or beef) to the skillet. Cook until browned and completely cooked through, about 5-7 minutes. Drain any excess fat. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for an additional 2-3 minutes until heated through.

          Fill the Zucchini Cups: Place the zucchini cups upright in a baking dish. Spoon the meat mixture into each zucchini cup, filling them generously.

            Top with Cheese: Sprinkle shredded cheese on top of each filled zucchini cup.

              Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.

                Garnish and Serve: Remove from oven and let cool slightly. Garnish with fresh cilantro and serve with sour cream and sliced jalapeños if desired.
