Mini Zucchini Frittata Toasts

2 medium zucchinis, grated

4 large eggs

1/4 cup milk (or milk alternative)

1/2 cup shredded mozzarella cheese

1/4 cup finely chopped onion

1/4 cup chopped bell pepper (any color)

2 tablespoons fresh basil, chopped (or 1 tablespoon dried)

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil

6 slices of crusty bread (such as sourdough or ciabatta)

Optional toppings: Cherry tomatoes, sliced radishes, or fresh herbs for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a medium skillet over medium heat, add olive oil. Once hot, add chopped onions and bell peppers; sauté for about 3-4 minutes until softened. Add grated zucchini and cook for another 3 minutes. Remove from heat and set aside to cool.

      Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper. Mix in the sautéed vegetables and half of the shredded mozzarella cheese. Stir in the fresh basil until evenly distributed.

        Toast the Bread: Place the slices of bread on a baking sheet. Lightly brush or drizzle with olive oil. Toast the bread in the oven for about 5 minutes, or until just beginning to crisp.

          Fill the Toasts: Remove the toasted bread from the oven and spoon the frittata mixture generously on top of each slice. Sprinkle the remaining mozzarella cheese on top.

            Bake the Frittata Toasts: Return the baking sheet to the oven and bake for 15-20 minutes, or until the egg is set and the tops are golden brown and bubbly.

              Garnish and Serve: Once ready, remove from the oven and let cool for a couple of minutes. Garnish with optional toppings like cherry tomatoes or radish slices, and serve warm.
