1 pound ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon oregano

Salt and pepper to taste

1/2 cup diced tomatoes (fresh or canned)

1/4 cup corn (fresh, frozen, or canned)

1 tablespoon lime juice

1 head of large iceberg or romaine lettuce

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

Optional toppings: sour cream, salsa, jalapeños

Instructions
 

Sauté the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Cook the Turkey: Increase the heat to medium-high and add the ground turkey. Break it apart with a spatula as it cooks. Season with chili powder, cumin, paprika, oregano, salt, and pepper. Cook until the turkey is browned and fully cooked, about 5-7 minutes.
