1 teaspoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red chili flakes (optional)

4 whole wheat pita breads

1 cup hummus (store-bought or homemade)

1 cup baby spinach (or mixed greens)

1 medium tomato, diced

½ cucumber, diced

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Season with cumin, paprika, salt, black pepper, and red chili flakes. Cook for about 7-10 minutes, stirring occasionally, until the turkey is browned and fully cooked through.

      Warm the Pitas: While the turkey is cooking, you can warm the pita breads. Wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for 5-10 minutes, or microwave them for about 20-30 seconds until soft and pliable.
