Ingredients

1 can (5 oz) tuna in water, drained and flaked

2 tablespoons mayonnaise

1 tablespoon Greek yogurt

1 teaspoon Dijon mustard

1 tablespoon lemon juice

¼ cup celery, finely chopped

2 tablespoons red onion, finely chopped

1 tablespoon dill pickles, finely chopped

Salt and pepper to taste

4 slices of whole grain bread

1 tablespoon olive oil

Fresh dill or parsley, for garnish (optional)

Instructions

Prepare the Tuna Salad: In a medium-sized bowl, combine the flaked tuna, mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Mix well until combined.

Add Crunch: Fold in the finely chopped celery, red onion, and dill pickles into the tuna mixture. Season with salt and pepper to taste.

Toast the Bread: Preheat your oven to 350°F (175°C). Use a round cookie cutter or a glass to cut the bread slices into circles. Brush both sides of each round with olive oil and place them on a baking sheet.

Bake: Bake the bread circles in the preheated oven for about 8-10 minutes or until they are golden brown and crisp. Remove from the oven and allow to cool slightly.

Assemble the Toasts: Spoon a generous amount of the tuna salad onto each toasted circle, spreading it evenly.

Garnish: If desired, garnish each mini toast with a sprig of fresh dill or parsley for a pop of color and freshness.

Serve: Arrange the mini tuna salad toast circles on a platter and serve immediately as a delightful appetizer or light lunch.
