1 large cucumber

1 can (5 oz) tuna, drained

3 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 stalk celery, finely chopped

1 tablespoon red onion, finely chopped

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Fresh dill or parsley, chopped (for garnish)

Instructions
 

Prepare the Cucumber: Wash the cucumber thoroughly. Cut it in half lengthwise, and then slice each half into 3-4 equal parts, creating boats. Use a small spoon to scoop out a little of the seeds if the center is watery.

    Make the Tuna Filling: In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, and lemon juice. Mix until well blended.

      Add Vegetables: Fold in the finely chopped celery and red onion into the tuna mixture. Season with salt and pepper to taste.
