Mini Spinach Artichoke Puff Melts

1 cup frozen chopped spinach, thawed and drained

1 cup canned artichoke hearts, drained and chopped

1/2 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1 package (1 sheet) of puff pastry, thawed

1 egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Filling: In a medium mixing bowl, combine the thawed spinach, chopped artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, crushed red pepper flakes (if using), salt, and pepper. Stir well until the mixture is creamy and fully combined.

      Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to about 1/8-inch thickness. Cut the pastry into 2-inch squares, or use a round cutter for circular shapes.

        Fill the Pastry: Place a tablespoon of the spinach-artichoke filling in the center of each pastry square. Be careful not to overfill, as you need to seal the edges.

          Seal the Puffs: Fold the corners of the pastry over the filling or fold the circles in half and pinch the edges to seal well. You can use a fork to crimp the edges for a decorative touch.

            Apply the Egg Wash: Brush the tops of the puff melts with the beaten egg to give them a golden finish when baked.
