Ingredients

1 cup uncooked spaghetti

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional)

1 cup taco meat (ground beef or turkey seasoned with taco seasoning)

1/2 cup shredded cheddar cheese

1/4 cup diced tomatoes

1/4 cup chopped green onions

1/2 cup sour cream or Greek yogurt

Mini taco shells (store-bought)

Fresh cilantro for garnish

Instructions

Cook the Spaghetti: In a large pot, boil water and cook the spaghetti according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

Flavor the Spaghetti: In a large bowl, combine the cooked spaghetti with olive oil, garlic powder, onion powder, and red pepper flakes. Toss well to evenly coat the pasta with the seasonings.

Prepare the Taco Meat: In a skillet over medium heat, cook your seasoned ground beef or turkey until browned and fully cooked. Drain any excess fat and set aside.

Assemble the Mini Bites: Preheat your oven to 375°F (190°C). Take a mini taco shell and fill it with a spoonful of the seasoned spaghetti, followed by taco meat, diced tomatoes, and a sprinkle of shredded cheddar cheese.

Bake: Place the filled mini taco shells on a baking sheet and pop them in the preheated oven for about 8-10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and let cool slightly. Top with chopped green onions, a dollop of sour cream, and a sprinkle of fresh cilantro for added flavor. Serve warm as a fun appetizer or snack!
