1 lb (450g) breakfast sausage (mild or spicy, your choice)

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup (1 stick) unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

1 tablespoon honey (optional)

1 egg (for egg wash)

Fresh chives or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain any excess fat and set aside to cool.

      Prepare the Biscuit Dough: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to work it into the flour until the mixture resembles coarse crumbs.

        Add Cheese & Buttermilk: Stir in the shredded cheddar cheese. Create a well in the center, then pour in the buttermilk (and honey if using). Mix with a fork until just combined; do not overmix.

            Form the Biscuits: On a floured surface, place the dough and gently knead it 3-4 times until it holds together. Pat it into a rectangle about 1 inch thick. Use a biscuit cutter (or a glass) to cut out rounds; place them on the prepared baking sheet.
