12 roma tomatoes

1 cup fresh mozzarella balls (bocconcini), halved

½ cup fresh basil pesto

¼ cup grated Parmesan cheese

1 tablespoon balsamic glaze (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Wash the roma tomatoes and slice off the tops. Using a small spoon or a melon baller, carefully scoop out the insides, creating small cups. Set aside.

      In a medium bowl, combine the halved mozzarella balls, basil pesto, grated Parmesan cheese, salt, and pepper. Mix well until the ingredients are evenly coated in the pesto.

        Using a small spoon, fill each hollowed tomato with the mozzarella pesto mixture, pressing gently to pack it in.

          Place the stuffed tomatoes upright in a baking dish. Drizzle with balsamic glaze if using, and sprinkle a little extra salt and pepper on top.

            Bake in the preheated oven for 15-20 minutes, or until the tomatoes are tender and the cheese is slightly melted.

              Once out of the oven, let them cool for a few minutes. Garnish with fresh basil leaves before serving.
