1 lb boneless, skinless chicken breast, diced

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

4 whole wheat pita pockets

1 cup cucumber, diced

1 cup cherry tomatoes, halved

½ red onion, finely chopped

1 cup crumbled feta cheese

½ cup plain Greek yogurt

2 tablespoons fresh lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Lettuce leaves (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the diced chicken with olive oil, oregano, garlic powder, paprika, salt, and pepper. Mix well to ensure the chicken is evenly coated. Marinate in the refrigerator for at least 30 minutes (up to overnight for more flavor).

    Cook the Chicken: Preheat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and no longer pink. Remove from heat and set aside.

      Prepare the Tzatziki Sauce: In a small bowl, mix together the Greek yogurt, lemon juice, dill, and a pinch of salt and pepper. Adjust seasoning to taste. This will serve as your delicious tzatziki sauce.

        Assemble the Pita Pockets: Warm the whole wheat pita pockets slightly in the oven or microwave to make them pliable. Fill each pocket with lettuce leaves, then add the cooked chicken, diced cucumber, cherry tomatoes, red onion, and a generous sprinkle of feta cheese.

          Top it Off: Drizzle the homemade tzatziki sauce over the filling in each pita pocket, adding more if desired.
