Mini Eggplant Pizza Bites

2 medium-sized eggplants

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

½ teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Olive oil, for brushing

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Eggplants: Wash the eggplants and slice them into ½-inch thick rounds. If desired, you can cut them into halves instead of rounds for a different presentation. Place the slices on a clean kitchen towel and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture and bitterness.

      Rinse and Dry: After 15 minutes, rinse the eggplant slices under cold water to remove the salt. Pat them dry with another clean towel or paper towels.

        Brush with Olive Oil: Place the eggplant slices on the prepared baking sheet. Brush one side of each slice lightly with olive oil and season with pepper and a pinch of salt.

          Bake the Eggplants: Bake in the preheated oven for 15 minutes until slightly tender. Remove from the oven and let cool for a few minutes.

            Add Sauce and Toppings: Flip each eggplant slice over and spoon a tablespoon of marinara sauce on top. Sprinkle with mozzarella cheese, followed by a light sprinkle of Parmesan cheese. Lastly, add the dried oregano, garlic powder, and red pepper flakes (if using).

              Final Bake: Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the eggplants are golden brown.

                Garnish and Serve: Remove from the oven and allow to cool for a couple of minutes. Garnish with fresh basil leaves before serving. These mini pizza bites can be enjoyed warm or at room temperature.
