4 large egg whites

1 cup fresh spinach, chopped

1/4 cup feta cheese, crumbled

1/4 cup cherry tomatoes, diced

1/4 cup red bell pepper, finely chopped

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with cooking spray or olive oil.

    Prepare the Spinach: In a medium skillet over medium heat, add the chopped spinach and sauté for 2-3 minutes, just until wilted. Remove from heat and let it cool slightly.

      Mix The Egg Whites: In a large mixing bowl, whisk together the egg whites, garlic powder, onion powder, salt, and pepper until well combined.

        Combine Ingredients: To the egg mixture, add the sautéed spinach, feta cheese, diced cherry tomatoes, and bell pepper. Gently fold everything together until evenly distributed.

          Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

            Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes or until the egg whites are set and a toothpick inserted in the center comes out clean.

              Cool and Serve: Remove the muffin tin from the oven and allow the muffins to cool for 5 minutes. Using a small spatula, gently pop each muffin out of the tin and serve warm.
