Mini Egg & Feta Biscuit Bombs

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, cold and cubed

1 cup buttermilk

4 large eggs

3/4 cup crumbled feta cheese

1 cup fresh spinach, chopped

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Hot sauce for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Biscuit Dough: In a large bowl, mix together the flour, baking powder, salt, and black pepper. Add the cold, cubed butter, and use a pastry cutter or your hands to combine until the mixture resembles coarse crumbs.

      Add Buttermilk: Slowly pour in the buttermilk, stirring until just combined. Be careful not to overmix; the dough should be somewhat sticky.

        Prepare the Filling: In a medium bowl, whisk together 4 eggs. Stir in the crumbled feta cheese, chopped spinach, and dried oregano until well combined. Season with a pinch of salt and pepper to taste.

          Form the Biscuit Bombs: On a floured surface, turn out the biscuit dough and gently knead it a couple of times until it comes together. Roll the dough into a 1-inch thick rectangle. Cut the dough into squares, about 3x3 inches.

            Assemble the Bombs: Place a tablespoon of the egg and feta mixture in the center of each square of biscuit dough. Fold the corners of the dough over the filling, pinching them together to seal the bombs tightly.

              Bake: Place the sealed biscuit bombs on the prepared baking sheet, seam side down. Bake in the preheated oven for 15-18 minutes, or until golden brown.

                Garnish and Serve: Once baked, remove the bombs from the oven and let them cool for a few minutes. Garnish with fresh parsley and serve warm, drizzled with a little hot sauce if desired.
