6 large eggs

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter

1 Granny Smith apple, thinly sliced

1 teaspoon cinnamon

6 slider-sized whole grain rolls or mini brioche buns

3 ounces sharp cheddar cheese, sliced

1 tablespoon honey (optional)

Fresh arugula or spinach for garnish (optional)

Instructions
 

Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Eggs: In a non-stick skillet over medium heat, melt the butter. Pour in the egg mixture and gently stir to scramble. Cook until the eggs are just set, making sure to keep them fluffy. Remove from heat.

      Sauté the Apples: In another pan, combine the sliced Granny Smith apple with cinnamon. Sauté over medium heat for about 3-4 minutes until the apples are slightly tender but still crisp. Set aside.

        Assemble the Sliders:

          - Slice the whole grain rolls or mini brioche buns in half.

            - In each bottom half, place a layer of the fluffy scrambled eggs.

              - Add a slice of sharp cheddar cheese on top of the eggs.

                - Layer on the sautéed apple slices.

                  - Drizzle with honey (if using) and add a small handful of arugula or spinach for some freshness.

                    - Finally, place the top half of the roll on each slider.
