2 medium zucchinis, grated

1 teaspoon salt

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon black pepper

2 large eggs, beaten

1 cup marinara sauce (for serving)

8 slider buns

Fresh basil leaves (for garnish)

Olive oil (for frying)

Instructions
 

Prepare the Zucchini: In a bowl, combine the grated zucchini with salt. Let it sit for about 10-15 minutes to draw out excess moisture. Afterward, wring out the zucchini in a clean kitchen towel to remove as much water as possible.

    Make the Mixture: In a large mixing bowl, combine the dried zucchini, breadcrumbs, Parmesan cheese, garlic powder, oregano, and black pepper. Mix well to ensure all the ingredients are evenly distributed.

      Add the Eggs: Pour the beaten eggs into the mixture and stir until you achieve a cohesive mixture that can form patties. If the mixture is too wet, add more breadcrumbs as needed.

        Form the Patties: Take small portions of the mixture (about 2 tablespoons) and shape them into mini sliders or patties. Place them on a parchment-lined baking sheet.

          Fry the Sliders: In a large skillet, heat a generous amount of olive oil over medium heat. Once hot, carefully add the patties in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy. Remove and place them on a paper towel to absorb excess oil.

            Assemble the Sliders: Slice the slider buns and place a crispy zucchini parmesan patty in between the halves of each bun. Top with a spoonful of marinara sauce and a fresh basil leaf.

              Serve: Arrange the sliders on a serving platter and serve warm with additional marinara sauce for dipping.
