1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons tikka masala spice blend

1 tablespoon minced garlic

1 tablespoon minced ginger

1 teaspoon salt

10 small tortilla wraps (flour or whole wheat)

1 cup cucumber, diced

1 cup tomato, diced

1/2 cup red onion, thinly sliced

Fresh cilantro, chopped, for garnish

1/2 cup mint yogurt sauce (store-bought or homemade)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine yogurt, lemon juice, tikka masala spice blend, minced garlic, minced ginger, and salt. Mix well until smooth. Add the chicken pieces to the bowl, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

    Cook the Chicken: Preheat your grill or stovetop skillet over medium-high heat. Remove the chicken from the refrigerator and thread the marinated pieces onto skewers (if using wooden skewers, soak them in water beforehand).
