8 small corn tortillas

1 cup cooked, shredded chicken (rotisserie chicken works great)

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1/2 cup fresh pico de gallo (or store-bought)

1/2 cup sour cream

1 avocado, diced

1 tablespoon olive oil

1 teaspoon taco seasoning

Fresh cilantro, for garnish

Jalapeño slices (optional, for added heat)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Tortillas: Lightly brush both sides of each corn tortilla with olive oil. Press each tortilla into a muffin tin cup, forming a cup shape. Bake in the preheated oven for about 8-10 minutes or until they are golden and crispy.

      Season the Chicken: In a mixing bowl, combine shredded chicken with taco seasoning. Mix until the chicken is evenly coated with the spices.

        Assemble the Cups: Once the tortilla cups are baked and cooled slightly, start layering. Add a spoonful of seasoned chicken to each cup, followed by a few black beans, and then top generously with shredded cheddar cheese.

          Bake Again: Place the assembled tortilla cups back into the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

            Add Fresh Toppings: Once out of the oven, remove the cups and let them cool briefly. Then, add a spoonful of pico de gallo, a dollop of sour cream, and diced avocado on top of each cup.
