12 mini taco shells

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1/4 cup sour cream

1 teaspoon taco seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon fresh cilantro, chopped (plus extra for garnish)

1/2 cup diced tomatoes (or pico de gallo)

Jalapeño slices (optional, for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a mixing bowl, combine the shredded cheddar, Monterey Jack cheese, cream cheese, and sour cream. Mix until well blended. Stir in the taco seasoning, garlic powder, onion powder, and freshly chopped cilantro. Mix until the ingredients are evenly distributed.

      Stuff the Taco Shells: Using a small spoon or a piping bag, fill each mini taco shell with the cheese mixture. Ensure you pack them well but don’t overstuff them, as they need to fit neatly on the baking tray.

        Arrange on Baking Tray: Lightly spray a baking tray with cooking spray. Place the stuffed taco shells upright on the tray, spaced apart to allow for even heating.

          Bake: Bake in the preheated oven for about 15-18 minutes, or until the cheese is melted and the taco shells are slightly golden and crisp.
