Ingredients

2 cups cooked jasmine rice (preferably chilled)

1 cup sharp cheddar cheese, grated

1/2 cup fresh jalapeños, finely diced (seeds removed for less heat)

1/4 cup green onions, chopped

2 large eggs

1/2 cup all-purpose flour

1/2 tsp baking powder

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (panko or regular)

Oil for frying

Instructions

Prepare the Mixture: In a large mixing bowl, combine the chilled cooked rice, grated cheddar cheese, diced jalapeños, and chopped green onions. Stir until evenly mixed.

Add Binding Ingredients: In a separate bowl, whisk together the eggs, flour, baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth. Then, pour this mixture over the rice mix and stir until everything is well incorporated.

Shape the Fritters: Use your hands to form small balls or patties about the size of a golf ball. Place them on a parchment-lined tray.

Coat with Breadcrumbs: Once all fritters are shaped, roll each one in breadcrumbs until fully coated. This adds a nice crispy texture when frying.

Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium heat. To test if the oil is ready, drop a small piece of batter in; if it sizzles, the oil is hot enough.

Fry the Fritters: Carefully add a few fritters to the skillet, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Repeat until all fritters are cooked, adjusting the heat as needed to maintain a steady frying temperature.

Drain Excess Oil: Once fried, transfer the fritters to a paper towel-lined plate to drain excess oil.

Serve: These mini cheddar jalapeño rice fritters are best served warm! Pair them with a dipping sauce like ranch or a spicy aioli for an extra kick.
