14 oz firm tofu, drained and pressed

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 head butter or romaine lettuce (for wraps)

½ cup shredded carrots

½ cup diced celery

¼ cup chopped green onions

¼ cup crumbled blue cheese or dairy-free alternative (optional)

Fresh cilantro or parsley for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into small bite-sized cubes. In a bowl, toss the tofu with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

    Sauté the Tofu: Heat a non-stick skillet over medium heat. Add the seasoned tofu cubes and cook for about 10 minutes, turning occasionally until golden brown and slightly crispy on all sides.

      Add the Buffalo Sauce: Pour the buffalo sauce over the tofu in the skillet, stirring gently to coat the cubes. Cook for an additional 5 minutes, allowing the sauce to thicken slightly and incorporate into the tofu. Remove from heat.

        Prepare the Lettuce Wraps: While the tofu is cooking, carefully separate the lettuce leaves, trying to keep them as whole as possible to serve as wraps. Rinse and pat them dry.

          Assemble the Bites: Place a few pieces of buffalo tofu in the center of each lettuce leaf. Top with shredded carrots, diced celery, and chopped green onions. If using, sprinkle blue cheese or dairy-free alternative on top.

            Garnish and Serve: Garnish each wrap with chopped cilantro or parsley. Serve immediately, allowing your guests to enjoy them fresh and crunchy!
