Mini Broccoli Egg Muffin Toasts

1 cup fresh broccoli florets, finely chopped

4 large eggs

1/4 cup milk (or a non-dairy substitute)

1/2 cup shredded cheddar cheese

1/4 cup diced bell pepper (any color)

1/4 cup green onions, sliced

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

4 whole-grain English muffins, split in half

Olive oil or cooking spray for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or cooking spray to prevent sticking.

    Prepare Broccoli: In a pan, briefly steam the chopped broccoli florets until tender (about 3-4 minutes). Set aside to cool slightly.

      Mix the Egg Base: In a large mixing bowl, whisk together the eggs and milk until smooth. Stir in cheese, bell pepper, green onions, garlic powder, salt, black pepper, and red pepper flakes if desired. Fold in the steamed broccoli until combined.

        Fill the Muffin Tin: Evenly pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.

          Bake: Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and lightly golden on top. A toothpick inserted in the center should come out clean.

            Prepare the Toasts: While the muffins are baking, toast the English muffin halves either in a toaster or on a skillet until golden brown and crisp.

              Assemble the Mini Toasts: Once the egg muffins are done, allow them to cool for a few minutes before gently removing them from the muffin tin. Place each mini egg muffin on a toasted English muffin half.

                Serve: Enjoy your Mini Broccoli Egg Muffin Toasts warm, garnished with additional green onions or a dollop of salsa if desired.
