Mini Broccoli Cheddar Potato Cups

2 medium-sized russet potatoes, peeled and diced

1 cup fresh broccoli florets, chopped

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup milk

1/4 teaspoon garlic powder

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for topping)

Olive oil or cooking spray, for greasing

Instructions
 

Preheat Oven: Set your oven to 375°F (190°C) and grease a muffin tin with olive oil or cooking spray.

    Prepare Potatoes: In a large pot, bring water to a boil. Add the diced potatoes and cook until tender, about 15 minutes. Drain and let cool slightly.

      Steam Broccoli: While the potatoes are cooking, steam the broccoli florets until they are bright green and tender, about 4-5 minutes. Remove from heat and chop into smaller pieces.

        Mash Potatoes: In a large mixing bowl, mash the cooked potatoes with a potato masher or fork. Add the softened cream cheese, garlic powder, milk, salt, and pepper. Mix until smooth and creamy.

          Combine Ingredients: Fold in the steamed broccoli and shredded cheddar cheese until evenly combined.

            Fill Muffin Tin: Spoon the broccoli-cheddar mixture into the prepared muffin tin, filling each cup to the top.

              Add Topping (Optional): If desired, sprinkle breadcrumbs over the top of each cup for a crispy finish.

                Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and slightly crispy.

                  Cool and Serve: Remove from the oven and let the mini cups cool for a few minutes. Gently run a knife around the edges and pop them out of the muffin tin. Serve warm as a delicious appetizer or snack!
