Ingredients

1 can (16.5 oz) refrigerated biscuit dough

6 large eggs

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled

1/2 cup diced bell peppers (red, green, or yellow)

1/4 cup milk

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Optional: Chopped green onions for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Filling: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Stir in the crumbled sausage, diced bell peppers, and half of the shredded cheddar cheese.

Cook the Filling: Heat a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring frequently, until the eggs are just set but still moist (about 3-4 minutes). Remove from heat and let cool slightly.

Prepare the Biscuit Dough: Open the can of biscuit dough and separate the individual biscuits. Flatten each biscuit into a circle about 3 inches in diameter, using your hands or a rolling pin.

Assemble the Bomb Bites: Place about 1 tablespoon of the cooked egg and sausage mixture in the center of each flattened biscuit. Sprinkle a little of the remaining cheddar cheese on top of the filling. Gently fold the edges of the biscuit dough over the filling to create a pouch, pinching the edges to seal tightly.

Bake the Biscuit Bombs: Arrange the filled biscuit pouches on the prepared baking sheet, seam side down. Brush the tops lightly with melted butter (optional) for a golden finish. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.

Serve and Garnish: Remove the bomb bites from the oven and let them cool for a few minutes. Garnish with chopped green onions if desired. Serve warm and enjoy this delicious, handheld breakfast treat!
