Mini BBQ Jackfruit Taco Sliders

Ingredients
  

2 cans young green jackfruit in brine or water, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup BBQ sauce (your favorite brand)

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper, to taste

12 slider buns or mini corn tortillas

1 cup coleslaw mix (optional, for topping)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Jackfruit: Using your hands or a fork, shred the drained jackfruit pieces until they resemble pulled pork. Set aside.

    Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, until translucent. Add the minced garlic and cook for another minute until fragrant.

      Add Jackfruit and Seasonings: Stir in the shredded jackfruit, smoked paprika, cumin, salt, and pepper. Cook for about 5 minutes, allowing the spices to toast slightly and the jackfruit to absorb the flavors.

        Incorporate BBQ Sauce: Pour in the BBQ sauce, stirring well to coat the jackfruit evenly. Reduce heat to low and let it simmer for about 10-15 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.

          Prepare the Sliders: While the jackfruit cooks, lightly toast the slider buns in a separate skillet or oven until golden brown.

            Assemble the Sliders: Place a generous spoonful of the BBQ jackfruit mix onto the bottom half of each slider bun. If using, top with coleslaw mix for added crunch and flavor, then place the top half of the bun on.

              Garnish and Serve: Garnish each slider with a sprinkle of fresh cilantro and serve with lime wedges on the side for an extra zing!
