1 medium cauliflower head (about 2–3 cups riced)

1 cup almond flour (or gluten-free flour)

1/4 cup ground flaxseed

1/2 cup nutritional yeast

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 cup water (more if needed)

1 cup BBQ sauce (your favorite brand or homemade)

1/2 cup shredded carrots

1/2 cup sliced red onions

Fresh cilantro or parsley, for garnish

Prepare the Cauliflower: Preheat your oven to 375°F (190°C). Take the cauliflower and remove the leaves and stem. Cut it into florets. Using a grater or food processor, rice the cauliflower until it resembles grains of rice.

    Cook the Cauliflower: In a microwave-safe bowl, add the riced cauliflower and cover it with a damp paper towel. Microwave on high for about 5–7 minutes, or until tender. Allow to cool slightly. Once cooled, wring the cauliflower in a clean kitchen towel to remove excess moisture.

      Make the Dough: In a large mixing bowl, combine the cooked cauliflower, almond flour, ground flaxseed, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well. Gradually add water until the mixture holds together.

        Shape the Buns: Line a baking sheet with parchment paper. Scoop out about 2 tablespoons of the mixture and shape it into a round bun shape. Repeat until all the mixture is used, spacing them evenly on the baking sheet.

          Bake the Buns: Place the baking sheet in the preheated oven and bake for 20–25 minutes, turning halfway through, or until golden brown and firm to the touch.

            Prepare BBQ Cauliflower Filling: While the buns are baking, toss the shredded carrots in the BBQ sauce. Set aside.

              Assemble the Sliders: Once the buns are ready, let them cool slightly. For each slider, top the bottom half of a bun with a generous scoop of the BBQ carrot mixture and sprinkle with sliced red onions. Add fresh cilantro or parsley for an extra flavor kick. Cover with the other half of the bun.
