6 small corn tortillas

6 strips of bacon

4 large eggs

1/4 cup shredded sharp cheddar cheese

1/4 cup diced tomatoes

1/4 cup diced avocado

1/4 cup chopped green onions

1 tablespoon fresh cilantro, chopped

Salt and pepper to taste

Hot sauce (optional)

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon strips until crispy. Once done, remove from the skillet and drain on paper towels. Leave about 1 tablespoon of bacon drippings in the skillet.

    Scramble the Eggs: In a bowl, whisk together the eggs and season with salt and pepper. Pour the eggs into the same skillet with the bacon drippings, and scramble over medium heat until just set and fluffy. Mix in the shredded cheese until melted. Remove from heat.

      Warm the Tortillas: In a separate dry skillet over medium-low heat, warm the corn tortillas for about 30 seconds on each side, or until they become pliable.
