Million Dollar Spaghetti Squash Pasta

1 medium spaghetti squash

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh basil leaves, for garnish (optional)

Red pepper flakes, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Cut the spaghetti squash in half lengthwise. Scoop out the seeds using a spoon. Drizzle the inside of each half with olive oil, and season with garlic powder, onion powder, salt, and pepper.

      Roast the Squash: Place the squash face down on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-40 minutes, until the flesh is tender and can be easily scraped into strands with a fork.

        Make the Filling: In a mixing bowl, combine the ricotta cheese, Italian seasoning, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well combined.

          Assemble the Dish: Once the squash is cool enough to handle, use a fork to scrape out the flesh into a large mixing bowl. Add in the marinara sauce and stir to combine.

            Stuff the Squash: Place the marinara-squash mixture back into the hollowed-out squash halves. Spoon the ricotta filling over the top, then sprinkle the remaining mozzarella and Parmesan cheese evenly over both halves.

              Bake Again: Return the stuffed squash to the oven and bake for an additional 20-25 minutes, or until the cheese is bubbly and golden.
