1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon salt (or to taste)

½ teaspoon black pepper

1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)

2 tablespoons olive oil

Fresh cilantro for garnish

Lime wedges for serving

Cook the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Stir in the rinsed quinoa, reduce heat to low, cover, and let it simmer for about 15 minutes, or until all the liquid is absorbed. Fluff with a fork and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: Stir in the black beans, corn, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Cook for about 5 minutes, allowing the mixture to heat through.
