Mediterranean Quesadillas

Ingredients
  

4 large flour tortillas

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 cup cooked spinach (or fresh, wilted)

1 cup diced roasted red peppers (jarred or homemade)

1/2 cup sliced black olives (Kalamata or regular)

1/4 cup chopped fresh basil

1/4 cup chopped fresh parsley

1 clove garlic, minced

1 teaspoon olive oil

Salt and pepper to taste

Optional: tzatziki sauce for serving

Instructions
 

Prepare the Filling: In a mixing bowl, combine the cooked spinach, diced roasted red peppers, black olives, crumbled feta cheese, mozzarella cheese, chopped basil, parsley, minced garlic, and a drizzle of olive oil. Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.

    Assemble Quesadillas: Heat a non-stick skillet or a griddle over medium heat. Place one flour tortilla on the skillet, and even out about 1/2 of the filling mixture on one half of the tortilla. Fold the other half over to create a half-moon shape.

      Cook the Quesadilla: Cook for about 3-4 minutes on one side, or until the tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla over and cook the other side for another 3-4 minutes. Repeat the process with the remaining tortillas and filling.

        Slice and Serve: Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges. Serve warm with optional tzatziki sauce for dipping.

          Garnish: You can garnish the quesadillas with additional chopped parsley or basil if desired.
