Mediterranean Chicken Pita Wraps with Tzatziki

For the chicken marinade:

1 lb (450g) boneless, skinless chicken breasts

3 tbsp olive oil

Juice of 1 lemon

3 cloves garlic, minced

1 tsp dried oregano

1 tsp ground cumin

Salt and pepper to taste

For the tzatziki sauce:

1 cup Greek yogurt

1 medium cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp olive oil

Juice of 1/2 lemon

Salt to taste

For the wraps:

4 whole wheat pita bread

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and sliced (optional)

Feta cheese, crumbled (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add the chicken breasts to the mixture, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Tzatziki Sauce: In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, olive oil, lemon juice, and salt. Mix well and adjust seasoning if needed. Refrigerate for at least 20 minutes to allow flavors to meld.

      Cook the Chicken: Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked (internal temperature reaches 165°F/74°C). Let the chicken rest for a few minutes before slicing it into strips.

        Assemble the Wraps: Warm the pita breads briefly on the grill or in a toaster. To assemble, place a generous amount of the grilled chicken strips in the center of each pita. Top with chopped romaine lettuce, halved cherry tomatoes, sliced red onion, Kalamata olives (if using), and a generous dollop of tzatziki sauce.
