Mediterranean Chicken Patties

Ingredients
  

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped red onion

1/4 cup grated zucchini (squeezed to remove excess moisture)

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp ground cumin

1/2 tsp salt

1/4 tsp black pepper

1/4 cup crumbled feta cheese

1 egg, beaten

Olive oil, for cooking

Optional: Lemon wedges and tzatziki sauce for serving

Instructions
 

Combine Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, red onion, grated zucchini, parsley, minced garlic, oregano, cumin, salt, black pepper, feta cheese, and the beaten egg. Mix well until all ingredients are evenly incorporated.

    Form Patties: With your hands, form the mixture into small patties about 2 inches in diameter and 1/2 inch thick. You should get about 8-10 patties.

      Preheat Cooking Surface: Heat a large skillet or grill pan over medium heat and add a drizzle of olive oil.

        Cook Patties: Once the oil is hot, add the chicken patties to the skillet, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and cooked through, with an internal temperature of 165°F (75°C).

          Serve: Remove patties from the skillet and place them on a plate. Serve warm with lemon wedges and a side of tzatziki sauce for dipping.

            Enjoy: These patties can be served alone, in pita bread, or on a salad for a delicious Mediterranean-inspired meal.
