3 cups rolled oats

1 cup nuts (such as almonds or walnuts), coarsely chopped

1/2 cup unsweetened shredded coconut

1/2 cup maple syrup

1/3 cup coconut oil, melted

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp sea salt

1/2 cup dried fruit (like cranberries or raisins), optional

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped nuts, shredded coconut, ground cinnamon, and sea salt. Stir until evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well-blended.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir with a spatula until all the dry ingredients are thoroughly coated.

          Form Clusters: Use your hands to press the mixture together, forming clusters as you add it to the baking sheet. Spread it out evenly, but keep the clusters together.

            Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown. Halfway through baking, stir it gently to ensure even toasting but be careful to maintain some clusters.

              Cool Down: Once done, remove the baking sheet from the oven and let the granola cool completely on the baking sheet. It will harden as it cools.

                Add Dried Fruits: If using, sprinkle the dried fruits over the cooled granola and mix gently.

                  Store: Once fully cooled, break the granola into clusters and transfer it to an airtight container. Enjoy it as a snack, with yogurt, or as a breakfast topper!
