Ingredients

4 salmon fillets (skin-on, about 6 ounces each)

1/4 cup pure maple syrup

1/4 cup bourbon

2 tablespoons soy sauce (low-sodium)

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley or scallions for garnish (optional)

Lemon wedges for serving

Instructions

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, bourbon, soy sauce, Dijon mustard, minced garlic, and grated ginger until well combined.

Marinate the Salmon: Place the salmon fillets in a resealable plastic bag or a shallow dish. Pour half of the marinade over the salmon, reserving the other half for glazing. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If using the oven, preheat to 400°F (200°C).

Prepare for Cooking: Remove the salmon from the marinade and let any excess liquid drip off. Pat the salmon dry with paper towels and season both sides with salt and pepper.

Cook the Salmon: For grilling, place the salmon fillets skin-side down on the grill. Grill for about 5-7 minutes, then brush with the reserved marinade. Flip and grill for another 3-5 minutes, or until the salmon is cooked to your desired doneness.

For oven cooking, heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the salmon fillets skin-side down for about 3-4 minutes. Brush with the reserved marinade, then transfer the skillet to the preheated oven. Bake for an additional 8-10 minutes.

Glaze and Serve: After cooking, remove the salmon from the grill or oven and brush with the leftover marinade one last time. Let it sit for a minute before serving.

Garnish and Enjoy: Garnish with freshly chopped parsley or sliced scallions, and serve with lemon wedges on the side for an extra burst of flavor.
