1 lb large shrimp, peeled and deveined

1 ripe mango, peeled and diced

1/4 cup orange juice (freshly squeezed if possible)

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon fresh lime juice

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Mango Glaze: In a blender, combine the diced mango, orange juice, soy sauce, honey, lime juice, minced garlic, grated ginger, and red pepper flakes. Blend until smooth. Taste and adjust seasoning with salt and pepper as necessary. Set aside.

    Marinate the Shrimp: In a large bowl, toss the shrimp with 2 tablespoons of the prepared mango glaze (reserve the rest for later). Let them marinate for at least 15 minutes for maximum flavor.

      Preheat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the marinated shrimp in a single layer. Sauté for about 2-3 minutes on one side, or until they start turning pink.

        Add the Glaze: Flip the shrimp and pour in the reserved mango glaze. Cook for another 2-3 minutes, stirring occasionally, until the shrimp are fully cooked (they should be opaque and curl into a C shape).

          Serve: Remove from heat and transfer the shrimp to a serving dish. Garnish with chopped cilantro and serve with lime wedges on the side. This dish pairs wonderfully with steamed rice or a fresh green salad.
