2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup fresh blueberries (adjust based on preference)

1 cup fresh blueberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

2 tablespoons water

Preheat the Oven: Preheat your oven to 325°F (160°C). Lightly grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    Make the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir in the vanilla extract until the mixture is evenly moist. Press the mixture into the bottom of the prepared baking pan, ensuring it's packed tightly. Bake for 10 minutes, then let it cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add sugar, mixing until combined. Beat in the eggs, one at a time, until just blended. Add vanilla extract and lemon juice, mixing until smooth.
