Ingredients

4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup Italian-style breadcrumbs

2 large eggs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

¼ cup all-purpose flour

½ cup marinara sauce

1 cup shredded mozzarella cheese

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil (for frying)

Instructions

Prep the Chicken: Begin by flattening the chicken breasts. Place each chicken breast between two sheets of plastic wrap and pound with a meat mallet until about ½ inch thick. This helps in even cooking and tenderizes the meat.

Set Up Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, add the flour. In the second bowl, whisk together the eggs, garlic powder, Italian seasoning, salt, pepper, and paprika. In the third bowl, mix the Parmesan cheese and breadcrumbs thoroughly.

Bread the Chicken: First, coat each chicken breast in the flour, shaking off excess. Then, dip it into the egg mixture, allowing excess to drip back into the bowl. Finally, dredge it in the Parmesan and breadcrumb mixture, pressing down slightly to ensure it adheres well.

Pan-Fry: In a large skillet, heat enough olive oil over medium-high heat to cover the bottom of the pan. Once hot, add the breaded chicken breasts. Cook for about 4-5 minutes on each side until golden brown and cooked through. You may need to work in batches depending on the size of your skillet. Let them rest on a paper towel-lined plate to absorb excess oil.

Top with Sauce and Cheese: Preheat your oven to 375°F (190°C). Move the cooked chicken breasts to a baking dish. Spoon about 2 tablespoons of marinara sauce over each piece and sprinkle with shredded mozzarella cheese.

Bake: Place the baking dish in the oven and bake for 10-15 minutes, until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley. Serve the Parmesan Chicken hot, alongside your favorite sides like pasta, salad, or steamed vegetables.
