To appreciate Cheesy Beefy Nacho Delight fully, it helps to understand the origins of nachos themselves. This beloved dish traces its roots back to Mexico, specifically to the border town of Piedras Negras, where it was first created in the late 1940s. According to popular lore, a group of American soldiers on a trip to Mexico were greeted by a local restaurateur named Ignacio “Nacho” Anaya, who whipped up a quick snack with the ingredients he had on hand—tortilla chips, melted cheese, and jalapeños. This simple yet delicious creation quickly gained popularity and evolved into the nachos we know today.

Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 cup water

1 bag tortilla chips (about 10-12 oz)

2 cups shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup diced tomatoes (fresh or canned, drained)

1 jalapeño, sliced (optional for heat)

1 cup sour cream

1 avocado, diced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

Sauté Aromatics: Add the diced onion and minced garlic to the browned beef. Sauté for about 2-3 minutes until the onion is soft and translucent.

Season the Meat: Stir in the taco seasoning and water, mixing well. Bring to a simmer and let cook for about 5 minutes until the sauce thickens slightly.

Prepare the Nacho Base: On a large baking sheet or a 9x13 inch baking dish, layer half of the tortilla chips at the bottom.

Layer the Goodies: Top the chips with half of the beef mixture, followed by half of the black beans, half of the diced tomatoes, and one cup of shredded cheddar cheese. Repeat with another layer of chips, meat, beans, tomatoes, and finish off with the remaining cheddar cheese on top.

Bake: Place the loaded nacho bake in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Once out of the oven, remove the nacho bake and let it cool for a few minutes. Top with fresh diced avocado, jalapeño slices (if using), a dollop of sour cream, and sprinkle with fresh cilantro. Serve with lime wedges on the side for an extra zesty kick.
