12 oz (340g) pasta of your choice (fettuccine or penne work well)

1 cup ricotta cheese

Zest of 2 lemons

½ cup freshly squeezed lemon juice (about 2-3 lemons)

1/2 cup grated Parmesan cheese, plus extra for serving

2 tablespoons olive oil

2 cloves garlic, minced

Salt and freshly ground black pepper, to taste

1/2 teaspoon red pepper flakes (optional)

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant (avoid burning).

      Mix Ricotta: In a bowl, whisk together the ricotta cheese, lemon juice, lemon zest, grated Parmesan, and a pinch of salt and pepper until smooth and well combined.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the sautéed garlic. Pour the ricotta mixture over the pasta and gently toss to combine, adding reserved pasta water as needed to achieve a creamy consistency.

          Season: Taste and adjust seasoning with additional salt, black pepper, and red pepper flakes if desired.

            Serve: Remove from heat, and serve immediately. Garnish with fresh basil or parsley, and extra Parmesan cheese, if desired.
