1 whole turkey (12-14 pounds), thawed

4 tablespoons olive oil

2 tablespoons sea salt

1 tablespoon black pepper

4 cloves garlic, minced

1 medium onion, quartered

2 lemons, zested and juiced

1 cup chicken broth

1/2 cup honey

1 tablespoon Dijon mustard

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1/2 teaspoon red pepper flakes (optional for a kick)

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Turkey: Remove the giblets and neck from the turkey cavity. Rinse the turkey under cold water and pat dry with paper towels. Place the turkey in a large roasting pan.

      Seasoning: In a small bowl, combine olive oil, sea salt, black pepper, garlic, lemon zest, and herbs. Rub this mixture all over the turkey, ensuring it gets under the skin for more flavor.

        Cavity Filling: Stuff the cavity of the turkey with the quartered onion and two lemon halves (squeeze the juice out a bit before placing them inside).

          Make the Glaze: In a small saucepan, combine chicken broth, honey, lemon juice, Dijon mustard, and red pepper flakes. Bring to a gentle simmer over medium heat, stirring frequently until well combined.

            Roasting Process: Pour 1/2 of the glaze over the turkey, making sure to coat it evenly. Place the turkey in the oven and roast for about 2.5 to 3 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
