Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice (about 2 lemons)

2 tablespoons honey

1 tablespoon soy sauce

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the lemon zest, lemon juice, honey, soy sauce, minced garlic, red pepper flakes (if using), salt, and pepper.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Toss to coat well and let it marinate for at least 15 minutes at room temperature. For more flavor, you can marinate the shrimp in the refrigerator for up to 1 hour.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

Cook the Shrimp: Remove the shrimp from the marinade (reserving the liquid) and add them to the skillet in a single layer. Cook the shrimp for about 2-3 minutes on one side until they turn pink and slightly charred.

Add Glaze: Flip the shrimp over and pour the reserved marinade into the skillet. Allow the sauce to bubble and reduce slightly, cooking until the shrimp are fully cooked through (about 2 more minutes).

Serve: Remove from heat and garnish with fresh parsley. Serve immediately over rice, quinoa, or alongside steamed vegetables.
