Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 2 lemons

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1/3 cup sour cream or Greek yogurt (optional)

Lime wedges for serving

Instructions

Marinate the Shrimp: In a large mixing bowl, combine the shrimp, olive oil, minced garlic, lemon zest, lemon juice, cumin, smoked paprika, red pepper flakes, salt, and pepper. Toss everything together until the shrimp is well coated. Let it marinate in the refrigerator for about 20-30 minutes.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they turn pink and opaque, then flip each shrimp and cook for an additional 1-2 minutes. Be careful not to overcook.

Prepare the Tortillas: While the shrimp is cooking, warm the corn or flour tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in aluminum foil and heating them in the oven.

Assemble the Tacos: On each warmed tortilla, layer a handful of shredded red cabbage, followed by a few shrimp. Top with avocado slices and a sprinkle of fresh cilantro. If desired, add a dollop of sour cream or Greek yogurt for creaminess.

Serve: Serve the tacos immediately with lime wedges on the side for an extra zesty kick. Enjoy!
