1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 garlic cloves, minced

Juice and zest of 1 lemon

1 tablespoon fresh parsley, chopped

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, red pepper flakes, and a sprinkle of salt and pepper. Whisk until well combined.

    Add the Shrimp: Place the cleaned shrimp into the marinade and toss to ensure they are evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to 1 hour.

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat. If you’re using wooden skewers, ensure they’ve soaked for 30 minutes prior to prevent burning during cooking.

        Skewer the Shrimp: Once marinated, thread the shrimp onto the skewers, leaving a bit of space between each shrimp to ensure even cooking.

          Grill the Skewers: Once the grill is hot, place the shrimp skewers on it. Grill for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through. Take care not to overcook them – shrimp cook quickly!

            Garnish: Once done, remove the skewers from the grill and sprinkle with fresh chopped parsley for an added layer of flavor. You can also drizzle extra lemon juice for a tangy kick.
