Lemon Garlic Shrimp Orzo

Ingredients
  

1 pound large shrimp, peeled and deveined

1 cup orzo pasta

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1/4 teaspoon red pepper flakes (adjust to taste)

2 cups spinach, fresh

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese, for serving (optional)

Lemon wedges, for garnish

Instructions
 

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the shrimp in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes until fully cooked. Remove the shrimp from the skillet and set aside.

      Make the Lemon Garlic Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, and sauté for about 30 seconds until fragrant.

        Combine Ingredients: Add the cooked orzo to the skillet, stirring to coat with the garlic sauce. Add the lemon zest, lemon juice, fresh spinach, and cooked shrimp. Toss to combine, allowing the spinach to wilt slightly.

          Finishing Touches: Remove from heat, stir in the fresh parsley, and adjust seasoning with more salt and pepper if needed.

            Serve: Plate the orzo and shrimp mixture, topping with grated Parmesan cheese if desired. Garnish with lemon wedges for an extra zesty kick.
