1 cup couscous

1 ΒΌ cups vegetable broth or water

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 lemon (zest and juice)

1/4 cup olive oil

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

Salt and pepper to taste

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Cook Couscous: In a medium saucepan, bring the vegetable broth or water to a boil. Stir in the couscous and remove from heat. Cover and let it sit for about 5 minutes, or until the couscous has absorbed the liquid. Fluff with a fork and set aside to cool.

    Prepare Vegetables: While the couscous cools, dice the cucumber, halve the cherry tomatoes, and finely chop the red onion. Set aside.

      Make Lemon Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, garlic powder, ground cumin, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled couscous, diced cucumber, cherry tomatoes, red onion, and chopped parsley. If using, add the crumbled feta cheese.

          Dress the Salad: Pour the lemon dressing over the couscous mixture and toss gently until everything is evenly coated.
