8 oz sweet potato starch noodles (also known as glass noodles)

2 tablespoons vegetable oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 red bell pepper, thinly sliced

1 carrot, julienned

1 cup spinach, washed and trimmed

4 shitake mushrooms, thinly sliced (or any mushrooms of your choice)

2 green onions, chopped

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon sugar

1 tablespoon sesame seeds (for garnish)

Pinch of salt and pepper to taste

Instructions
 

Prepare the Noodles:

    Begin by soaking the sweet potato starch noodles in hot water for about 30 minutes or until they become soft and pliable. Drain and set aside.

      Stir-fry the Vegetables:

        In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced onions and garlic, sautéing until fragrant and translucent, about 2-3 minutes.

          Add Remaining Vegetables:

            Next, add the red bell pepper, carrot, and shitake mushrooms to the skillet. Stir-fry for an additional 4-5 minutes until the vegetables are cooked but still crisp.

              Incorporate Spinach:

                Toss in the spinach, stirring until it wilts down, which should take about 1 minute. Remove the skillet from heat temporarily.

                  Mix the Sauce:

                    In a small bowl, whisk together the soy sauce, sesame oil, sugar, salt, and pepper to create a flavorful sauce mixture.

                      Combine Noodles and Sauce:

                        Add the soaked noodles to the skillet along with the sauce mixture. Using tongs, gently toss everything together until the noodles are well-coated with the sauce and mixed with the vegetables.
