¾ cup packed light brown sugar

2 large eggs

2 teaspoons pure vanilla extract

Zest of 2 medium key limes

¼ cup fresh key lime juice (about 3-4 limes)

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup shredded sweetened coconut

1 cup white chocolate chips

Optional: extra shredded coconut for topping
