Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup sharp cheddar cheese, shredded

1/2 cup pickled jalapeños, chopped (adjust for spice preference)

3/4 cup buttermilk (or milk with 1 tablespoon lemon juice)

1 large egg, beaten (for egg wash, optional)

Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Combine dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well mixed.

Cut in the butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add cheese and jalapeños: Gently fold in the shredded cheddar cheese and chopped jalapeños until evenly distributed.

Mix in buttermilk: Create a well in the center of the dry ingredients and pour in the buttermilk. Stir gently until just combined; avoid overmixing. The dough should be slightly sticky.

Shape the biscuits: Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle. Use a biscuit cutter or a sharp knife to cut out circles or squares. Gather scraps and repeat until all dough is used.

Prepare for baking: Place the biscuits on the prepared baking sheet. If desired, brush the tops of each biscuit with the beaten egg for a golden finish.

Bake: Transfer the baking sheet to the preheated oven and bake for 15-20 minutes, or until the biscuits are golden brown and puffed up.

Cool and serve: Remove from the oven and let cool for a few minutes. Serve warm with butter or your favorite breakfast spread.
