2 cups ricotta cheese

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract

3 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

Zest of 1 lemon

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

Sprinkles (optional, for decoration)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Prepare the Dough: In a large mixing bowl, combine the ricotta cheese and granulated sugar. Mix with a hand mixer or whip by hand until smooth and creamy.

      Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract until well incorporated.

        Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest.

          Combine Mixtures: Gradually add the dry mixture to the ricotta mixture, using a spatula or wooden spoon to mix until just combined. Be careful not to overmix; the dough should be thick but slightly sticky.

            Scoop the Cookies: Using a cookie scoop or tablespoon, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake: Bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden. The centers may still appear soft; that’s okay!

                Cool: Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
